A couple of guys are coming round for dinner later. One of them has eaten every meal I can cook. So I need some suggestions. I need for you to suggest a dish of the day. I want to steer clear of the following though: stir fries, roasts (our oven goes mental) and simple stuff like salmon, steak and chops. I am a pretty basic cook but am willing to try my hand at a few things. I am also hoping to not spend the entire night in the kitchen, so something low-maintenance would be good.

So umm if you have any cracking ideas then please leave a comment. I'm replying on you guys!

'simple stuff' can usually be made better without much more work - the little things like making your own vinaigrette is what can take a ho-hum average meal to excellence, even with simple things. for instance, instead of just grilled pork chops or breaded fried pork chops, you could dredge them in chopped pecans, sear them, and chuck in the oven for ~10min to cook the rest of the way through, and serve with a honey-chile sauce. sure, it's a little more effort to make the sauce and if you can't find any pre-chopped, smash up the pecans, but it's wicked good. or, instead of just plain grilling steak, make a garlic-herb butter or get some good blue cheese and sear the steak and slather the butter or cheese on top put it in the oven for a few minutes and let it get all melty and delicious while the steak finishes cooking.

They do sound good but they sound like there is quite a lot of room for error :s i will try cooking them just for me another night and if I canamke it work then i will add it to my repetoire, thanks :)

that is one of the scariest chili con carne recipe i have ever seen, though the presence of cilantro (and lack of ketchup) is encouraging :P

it's going to be fairly bland, though - most recipes i've seen for half the amount of meat have 3x as much cumin and have a few tablespoons of cili powder (which, in the us, tends to be a combination of cumin, ground chili pepper, some dehydrated garlic, paprika, and other such things) to boot, as well as oregano. i like to use beer (an oatmeal stout microbrew that was in a variety pack that i absolutely hate to drink, but is good for cooking) rather than wine.

I have some wine open anyhow so I will prob use that. I will only do half of the quantites they suggest - I dont think my pan could handle a kilo of meat.

If you have a grill and a grill basket (something so small things in the grill don't fall through) this is my no-fail crowd pleaser:

get some shrimp (they don't have to expensive - frozen is fine, even pre-cooked is fine, just make sure they are decent size 45/pound is good)
get some scallops if you're feeling spendy.
get some red peppers, green peppers and red onions. Cut em up iinto pieces about the same as your shrimp and scallops
Melt some butter on the stove, add minced garlic - lots of it. Put all your veggies adn seafood in a bowl, toss with the butter/garlic mixture, and refrigerate.

Get some shredded green cabbage and a pineapple salsa
Get some limes, and slice them up.

Get some flour tortillas (burrito size is good).

Fire up the grill - when it's good and hot, put the seafood/veggie/butter mixture in the grill basket and cook over the flames for about 6 minutes, keeping the basket moving pretty often - there will be flare ups so watch out for kids, long hair, low hanging branches, cats, etc.

when scallops and shrimp are cooked through, turn into a clean bowl, set out with everything else, and invite everyone to make up their own wraps. It's SMASHING. My favorite summer food. It never lasts, and I never have leftovers, even when I think I've bought too much.

Can u just buy a pineapple salsa?

It sounds delicious though - Ive done fajita before but never with shrimp. I shall have to try it!

Sure...if you go to a more upscale grocery store - it might be in the salsa section, or it could be in the "ethnic foods" or "specialty foods" - there are a few brands out there. My favorite doesn't last a day at our house. :)

How about an Indian or Thai curry with rice and one other side?

Despite their reputation, many curries are simple/easy, especially if you buy a prepared "curry paste." Those pastes are usually very good too.

Yeah, i keep meaning to try making a curry. I shall get round to it one day!
